DQ ice cream cake makeover!!!

This cake received rave reviews from our family and Brandon (who has notoriously hated healthy imitators when it comes to treat foods:)
To make it taste right I still had to load up the carbs but in form of dates, honey, granola, and a banana. Overall, still better macros and ingredients that you would be proud to eat on a daily basis (minus cool whip maybe!) Here are the stats to compare: DQ cake: 500 cal 19 grams fat, 72 grams carbs, 11 grams protein.
Katified: 362 cal, 10.4 grams fat, 59.8 grams carbs, 9 grams protein
Maybe a new spring post workout meal?! No ice cream maker required! It just takes some patience and prep with freezing.
Ingredients and Directions: ——MAKE SURE YOU SOAK DATES IN WATER FOR AT LEAST TWO HOURS PRIOR TO MAKING!!!!

Base Layer:

2.5 cups unsweetened almond milk
2.5 scoops Quest Vanilla Protein Powder
1 tsp vanilla extract
1 frozen banana
10 ice cubes
1 container Free Cool Whip
****Blend all ingredients in Vitamix except cool whip. Take out Cool Whip from freezer and allow to soften for 10 minutes. Add cool whip and blend well. Place into container and freeze for 45-60 minutes. Meanwhile prepare middle layer
Second Layer
1 can white navy beans
40 grams oatmeal (I used oatmeal from our Athlete’s Croner Pro Shop that was Cake Batter flavored)
20 Medjool Dates (get pitted!)
1 tsp vanilla extract
1/4 cup Cookie Almond buff butter
1/3 cup dark chocolate chips
***Blend all ingredients except choc chips in Vitamix on low speed for 5 minutes stirring with tamper every so often. Once blended well add in chocolate chips and then transfer to bowl and freeze.
Third Layer
2 cups Oats N Honey Granola
1/3 cup coconut oil
2 TB honey
2 tsp vanilla extract
4 TB unsweetened dark chocolate cocoa powder
***Melt coconut oil in microwave for 60 minutes. Whisk in cocoa powder, vanilla, and honey, Pour over granola and mix well. Place in freezer.
 
Top Layer and Assembly:
Free Cool Whip Tub
****Add base ice cream layer to cake pan and smooth out well. It should be frozen enough to handle the rest of the layers without mixing. Top base with cookie dough layer. Top cookie dough with fudgey granola layer. Finish off the cake with tub of cool whip and 15 dark chocolate chips to outline the cake.
Freeze for 45 minutes and then enjoy!!!!!
