Shepherd’s Pie with Cauliflower Mash

Serves 6

  • 1lb 96/4 ground beef
  • 150g chopped yellow onion
  • 3 cloves garlic, minced
  • 30g tomato paste
  • 100g frozen peas
  • 1 bag Trader Joe’s Cauliflower Mash, prepared
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika

1.) Sauté chopped onion in pan sprayed with cooking spray.
2.) Add ground beef when onions are soft and translucent.
3.) While beef is cooking, prepare cauliflower mash as instructed on the bag.
4.) Add minced garlic when beef is almost fully cooked.
5.) Add tomato paste, rosemary, thyme, salt, and pepper.
6.) Add frozen peas and stir until warmed through.
7.) Spread beef and pea mixture on the bottom of a casserole dish.
8.) Spread prepared cauliflower mash on top of beef mixture.
9.) Lightly spray top of cauliflower mash with cooking spray and sprinkle with paprika.
10.) Bake at 350 for 20-30 min until bubbly and heated all the way through.

**Let stand under foil for 15-20 min before serving.
