Serves 8
- 2-3lb Pork tenderloin, trimmed, cut into 1in cubes
- 1/2 yellow onion
- 1 whole jalapeño, halved (optional)
- 4 cloves garlic
- Juice of one lime
- Juice of one orange
- 1 tbsp cumin
- 1/2 tbsp dried oregano
- 1 tbsp kosher salt
- 1/2 tbsp black pepper
- Handful fresh cilantro, chopped
1.) Combine all ingredients except for cilantro in slow cooker and mix.
2.) Cook on low for 6-8 hours or on high for 4-6 hours.
3.) Meat should “fall apart” when fully cooked. Remove halved jalapeño. Using tongs or two forks, shred the pork and mix with juices.
4.) For extra flavor and texture, remove pork from slow cooker and spread onto a large sheet pan and place under broiler for about 5 min to crisp and brown the top.
5.) Sprinkle with fresh cilantro and enjoy!
