Cheesy Lean Beef and Zucchini Lasagna

2 large Zucchini
1 package (2 cups) Reduced Fat Shredded Mozzarella Cheese
2 whole eggs
1 container Low Fat Ricotta Cheese
3 tsp salt
3 tsp Italian spice
3 tsp black pepper
2lbs 96% lean beef

1 – 18oz container Pizza Sauce
2 TB Parmesan CheeseInstructions:
Pre Heat oven to 410 degrees.
Slice one Zucchini into long thin slices and layer on bottom of baking dish like lasagna noodles. Brown beef with 2 tsp of all spices. Meanwhile, mix ricotta cheese with eggs and 1 tsp of all spices. Top zucchini in this order: tomato sauce, ricotta cheese mixture, beef, and shredded cheese. Layer second sliced zucchini on top of beef mixture. Finish with other half of beef, cheese, and pizza sauce mixture. Top with parmesan cheese.
Bake in oven for 25-35 minutes or until cheese is bubbling.
